Origin and name

The name “pastrmajlija” comes from the word “pastrma”, which refers to salted and dried mutton or lamb. Although this type of meat was traditionally used, pastrmajlija today is most commonly made with fresh pork or chicken. For centuries, this dish has been considered a true delicacy in households across North Macedonia, and today, it can be found in almost every traditional restaurant.

Appearance and preparation

Pastrmajlija has an oval shape and is often compared to pizza due to its form and preparation method. However, unlike classic pizza, pastrmajlija’s dough is lighter, without tomato sauce, and the topping consists exclusively of seasoned meat, often served with spicy peppers as a side.

Recipe for the perfect pastrmajlija

Ingredients:

  • 500 g flour
  • 250 ml lukewarm water
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 teaspoon dry yeast
  • 2 tablespoons oil
  • 300 g pork (preferably pork neck)
  • 1 teaspoon ground red paprika
  • Salt and pepper to taste
  • 1 egg (optional, for brushing the dough)

Preparation:

  1. In a bowl, mix flour, salt, sugar, and dry yeast. Add lukewarm water and oil, then knead a smooth dough. Cover with a cloth and let it rest for about 1 hour.
  2. While the dough is rising, cut the meat into small pieces and season it with salt, pepper, and ground red paprika.
  3. Once the dough has risen, divide it into two parts and shape each into an oval about 1 cm thick.
  4. Place the prepared meat in the center of each piece of dough.
  5. Preheat the oven to 220°C. If desired, brush the edges of the dough with a beaten egg.
  6. Bake in the preheated oven for 20-25 minutes, until the dough turns golden brown and the meat is fully cooked.
