Biftekia: A Mediterranean Classic

The authentic taste of Greek cuisine on your plate

Biftekia is one of those dishes that instantly evokes images of summer lunches in the shade of olive trees, in small tavernas along the Greek coast. While they may resemble burgers or patties at first glance, biftekia are much more – they represent the flavors of tradition, homemade cooking, and the Mediterranean way of life.

This Greek version of a burger is made from ground meat, most commonly a mix of pork and beef, enriched with herbs, spices, and soaked bread, which gives the patties a distinct softness and juiciness. What makes them special is the use of fresh ingredients, simple preparation, and a unique balance of Mediterranean flavors.

The Secret of Flavor – A Harmony of Ingredients

The foundation of biftekia lies in carefully selected ground meat – pork and beef, preferably from the shoulder or neck, providing a rich and full taste. To this, sautéed onion is added, first gently softened in Greek extra virgin olive oil until golden, then cooled before being mixed in.

Soaked and well-drained bread gives structure, while eggs, grated tomatoes, and Greek oregano add moisture and that recognizable Mediterranean aroma. Rosemary brings a stronger fragrance, though it can be replaced with honey for a mild, sweet twist. The mixture is seasoned with black pepper, salt, and finally fresh parsley to round out the taste.

How to Make Them

Once the ingredients are combined into a uniform mixture. It’s essential to let it rest in the fridge for a few hours. This allows the flavors to meld and makes shaping the patties easier. After chilling, the biftekia are shaped as desired and cooked – whether on a grill, in a pan, or baked in the oven.

When serving, a generous squeeze of lemon juice is a must – it brightens and elevates the dish. Typical sides include rice, roasted potatoes, or tzatziki sauce, along with a fresh salad.
